John Parlatore is the Executive Chef for Sprig Restaurant. Chef Parlatore is a graduate of the French Culinary Institute in Manhattan, where he studied French technique, artisan bread and pastry.
Prior to joining Sprig, Chef Parlatore served as the Executive Chef de Cuisine for the Fig & Olive restaurant group in New York and the Executive Chef for the Salmagundi Club on Fifth Avenue in New York. Chef Parlatore has also worked for Club Corporation of America, the country's leading private club organization.
On three occasions John was invited to the prestigious International Gastronomy Festival of Mougins in France, the world's largest gathering of two and three star Michelin chefs. For two of those years, he was the only American chef.
Chef Parlatore brings more than thirteen years of restaurant and culinary knowledge in companies ranging from small boutique, private clubs to multi-million dollar restaurant groups.
